The extremely low temperature of liquid nitrogen can quickly freeze water and form tiny ice crystals,
thereby reducing damage to fruit cells.
At the same time, due to the extremely low temperature of liquid nitrogen, it can prevent water from
forming large ice crystals during the freezing process, reducing mechanical damage to fruit cells during
